Matsunoi Shuzo is in very heavy snowfall area in Niigata.
Heavy snowfall brings stabilized low tempratures in winter.
It provides long-duration fermentation which brew "clean-smooth" SAKE.
That is the feature of Niigata SAKE.
This SAKE, Matsunoi Tokubetsu Junmai, is exactly that.

Review Koshinohomare Kanzake

Koshinohomare Kanzake

The SAKE brand, Koshinohomare, is popular in Niigata.
Because, we often saw Local TV commercial of this brand few years ago.
The narration in the film is Japanese poem.
The film is artistic and impressive for me.

So, the brewery, Hara shuzo is large one in Niigata.
The brewery makes many types of SAKE.
This SAKE, Koshinohomare Kanzake is specialized drinking for Hot.
“Kan” means Hot SAKE about 30-55 deg.C.

Heating SAKE have some effects.
For example, emphasizing umami and aroma, softening acidity.
If the SAKE is served heated, you can feel gentle aroma and moderate umami.
